{Happy Cinco de Mayo!}
Ricky and I started the day with an early session at the Mount Timpanogos Temple. After a couple of soccer games, we came home and prepared a little fiesta for our family. It was my first time making pineapple mango salsa. The pineapples and mangos are on sale at Smith's this week so I decided to give it a whirl. I studied a few recipes online, then combined them to make one of my own. Basically, we chopped a fresh pineapple, 3 mangos, a couple of plum tomatoes (seeded and sliced), a handful of cilantro, added some freshly squeezed lime juice, and a very small amount of salt. It was pretty darn good. Actually delicious. We brought this plate to some neighbors and enjoyed the rest with our dinner...
